- 2 tablespoons of instant coffee
- 190 grams of water
- 1 tablespoon of each powder (katakurika, cocoa)

- 50 grams of cream cheese
- 20 grams of sugar
- 50 grams of fresh cream
- 1 teaspoon of brandy or rum

- Make the cream cheese. Gradually mix the sugar into the cream cheese. Mix the ingredients with the whipped ingredients and add cognac to taste.
- Fill 8 balls with a diameter of 3 cm with cream. Place on a baking sheet and refrigerate (double the amount).

- Prepare the dough for the daifuku. Place the rice flour, sugar and coffee in a heatproof bowl and mix well.

- Gradually add water and mix until there are no lumps in the mixture. Cover with cling film and heat for 2 minutes at 700 watts.

- Mix well with a damp wooden spoon, cover again with cling film and heat for a further 1 minute. Repeat this 2-3 times and feel it. If there are no more lumps, it's done.

- Mix equal amounts of katakuriko and cocoa for the topping. Spread the batter over the dry ingredients and sprinkle the cocoa mixture on top. Flatten and cut into 8 equal parts.

- When the mixture has cooled, pour the cream on top and mix. As the mixture heats up, the cream will begin to melt.

- Fold and voila!! Cool in the refrigerator and eat. They are still soft the next day!

- This is the Strawberry Daifuku version. Wash and dry the strawberries. Spread porridge - smooth bean paste in the palms of your hands and wrap the strawberry in it. Wrap it in white daifuku dough.

- Strawberry daifuku is ready! Perfect for strawberry season.
